Ogre ribs are a quest item dropped by Ogres during the Rag and Bone Man quest. The bone must be cleaned. This is done by adding it to a pot of vinegar and then boiling them in the pot-boiler by the Odd Old Man's house north east of Varrock. Once cleaned they become polished ogre ribs and can be given to the old man.

It is possible to have more than one at a time.
